Spring Cupcakes
Because I miss warm weather, I made plain vanilla cupcakes with a springtime theme. I bought pre-made sugar flowers and a small container of edible gold dust powder from the Broadway Panhandler. I thought the gold powder was pretty…plus it looked like pollen. Read the recipe for these delicious cupcakes after the jump!
Makes a dozen ‘medium’ or two dozen ‘small’ cupcakes:
- 1/2 c. unsalted butter
- 1/2 c. sugar
- 3 eggs
- 1/4 c. milk
- 1 tsp vanilla extract
- 1 1/2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- pinch of salt
Preheat the oven to 350F. Blend the butter and sugar until creamy. Gradually add in the eggs and milk while still mixing (hand mixing or with a mixer, on low speed). In another bowl, mix the flour, baking powder and salt. Gradually add the dry mixture to the butter/sugar/eggs/milk mixture, and then add the vanilla extract. Bake for 15-20 minutes.
