Basil Split Pea Soup

I woke up at 9:30am feeling like crap and I made myself feel better the only way I know how: homemade soup (and later, boozed up hot chocolate).

For a big pot of sooooup!:

  • 2 c. dry split peas
  • 5 c. of vegetable stock
  • 1 c. of water
  • 1 c. diced onions
  • 1 carrot, diced
  • 2 tbsp. olive oil
  • 3 cloves of minced garlic
  • 1 tbsp. minced basil
  • splash of lemon juice
  • salt and pepper to taste

Warm the water and stock in a large saucepan. Boil the peas in the water and stock mixture over high heat until it boils. Lower the heat after it boils and cover the saucepan. In a different pan, sauté the onions and carrots in olive oil for about 10 minutes. Then, add the garlic and basil and sauté for a few more minutes. Add the vegetable mixture into the large saucepan with the peas. Simmer for about 45 minutes until the peas are mushy enough to turn the soup green (I tend to crush it with my ladle) and add a splash of lemon juice, and salt/pepper to taste. Add water to the mixture of necessary but if it’s too thin, let it sit in medium heat a little longer…that’s it! It tastes pretty great with my homemade recession bread.
