Cranberry Muffins

As a gift for my godmother, I made a fresh batch of cranberry muffins (this recipe makes 9 regular sized):

  • 5 1/2 tbsp. melted butter
  • 1/2 c. sugar
  • 1 egg
  • 2 tbsp. soy milk
  • 3/4 c. flour
  • 2 tsp. baking powder
  • pinch of salt
  • 3/4 c. of frozen whole cranberries, cut into halves

Preheat the oven to 350f and line the muffin tin with baking cases. Mix the butter and sugar in a large bowl until it is fluffy. Gradually beat in the egg, then add the milk. Slowly mix in the flour, salt and baking powder.

When the batter is well mixed, fold in the frozen cranberries.

Spoon the batter into the baking cases and bake for about 15 minutes until it is golden brown.
