Chocolate Banana Bread

After a intimate get together —with a piano, Joni Mitchell, and a pull-up bar—, it was suitable to make chocolate banana bread at 2 a.m. We (Anna, me, Josh and Ryan) used a hammer to smash the baking chocolate because it was like a brick. Apparently this chocolate smashing job requires the work of four people. I used the following recipe but halved all the ingredients since we only had two bananas. Read the recipe after the jump!

For a 9”x3” loaf:

  • 4 ripe bananas, smashed
  • 1/3 c. melted butter
  • 1/2 c. chocolate chips/bits
  • 1 c. sugar
  • 1 egg beaten
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • Pinch of salt
  • 1 1/2 c. of all-purpose flour

Preheat the oven to 350°F. Mix butter into the mashed bananas in a large bowl. Add in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour and then fold in the chocolate.

Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
