Zesty Potato Salad
I hate this New York City heat. For some reason, there’s no breeze going through the apartment (and there usually is one) and there’s a lot of breeze on the street. It’s so much cooler outside than it is in my apartment! The thing I love about hot weather are the cold foods…fudgesicles & ice cream!…gazpacho!….pasta salads!…potato salads! So I made a really easy and healthy potato salad today. If you know how to boil potatoes, than you know how to make this salad.

Makes a big freaking bowl of potatoes:
- 2 lbs. red potatoes
- 3/4 c. chopped celery
- 1/4 c. chopped chives
- 1/2 c. fat-free mayonnaise
- 2 tbsp. lemon juice
- 3/4 tsp. sugar
Boil the potatoes and then cut them into quarters so that they’re less than 3/4”. Mix in the celery, boiled potatoes, and chives in a large mixing bowl. In another container, mix the mayo, lemon juice, and sugar together. Pour the sauce container into the large mixing bowl and mix slowly.
