Dark Chocolate Cranberry Cookies

This recipe makes about two dozen cookies.

  • 3 c. all-purpose flour
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 c. unsalted butter
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract
  • 1 1/2 c. light brown sugar
  • 1 c. granulated sugar
  • 3 large eggs
  • 1 c. dark chocolate chips
  • 1 c. dried cranberries

Preheat the oven to 375F. Mix together the flour, baking soda and salt. In another bowl, melt the butter and let it cool. Add the sugars, vanilla extract, and almond extract to the melted butter bowl; gradually whisk in the eggs. Combine the liquid sugar mixture into the dry mixture. Fold in cranberries and chocolate. Bake for 10-15 minutes.

Edit: I forgot to mention that you should scoop a tablespoon of cookie dough onto a cookie/baking sheet lined with unbleached parchment paper. I always try to use parchment paper instead of greasing the pan so the cookies don’t get overly crispy!
