Tuesday, 1:00am. Murray Hill, New York City. A belated post about the most awesome grilled cheese sandwich ever! Our friend Mike works for an ad/marketing firm and there’s a big artisanal cheese client. As a result, there were TONS of left over cheeses, untainted by the food stylist. At one point, there was a half wheel of cheese and a quarter pound of at least 4 different cheese. The bad part is, is that some cheeses had half labels while other cheeses had no labels; I’m not enough of an expert to distinguish some of the cheeses especially when they’re obscure Spanish cheese. Weeks later, there are a lot of cheese scraps and bits — it makes the cheeses even more of a mystery because there are no labels at all! I’ve come up with a genius way to use all of the pieces of the mystery cheeses and not be wasteful: make a grilled cheese. This savory sandwich has at least 4 different kinds of “mystery” cheeses and it’s the most delicious thing I’ve ever had in my life.
