Apfelpfannkuchen

I’ve been eating German Apple Pancakes for breakfast lately:

A German Apple Pancake is basically a large, thick pancake with apples in it; the Germans know it as a “apfelpfannkuchen.” It is a sweet breakfast dish that is often baked in a skillet with the dough poofing upward from the edge of the pan. Then, the pancake is finished with powdered sugar and cut into slices before it is served.

While it is denser than most pancakes in general, it’s subtly sweet with a custard-like flavor and the apples help give it a nice texture. What I like about this dish is that if you’re only preparing it for yourself, it can last you six breakfasts (since each German Apple Pancake is normally sliced into sixths) after you bake it: microwave/heat a pancake slice in the morning and you have a hot breakfast!

(I named this post ”apfelpfannkuchen” so I can try to make YOU say it but if you know the German language very well, say “Eyjafjallajökull” instead.)

For a 9” pie pan (from Serious Eats):

  • 2 tbsp. melted butter
  • 2 medium apples, peeled, cored and cut into 1/2 inch wedges — but I like mine thinner
  • 1 tbsp. brown sugar
  • 1 tsp. ground cinnamon
  • 3 eggs
  • 1 c. milk
  • 3/4 c. all-purpose flour
  • 1/8 tsp. salt
  • 3/4 tsp. baking powder
  • 3 tbsp. sugar

Adjust oven rack to middle position and preheat the oven to 350F. Pour the melted butter in a glass pie pan and coat bottom. Sprinkle pie plate with brown sugar and cinnamon then arrange apple slices on top. Bake until apples are slightly softened, about 10 minutes. Meanwhile, whisk eggs and milk in large bowl. Add flour, salt, baking powder, and sugar, and whisk until just combined. Pour batter over softened apples and bake for 25 to 45 minutes, depending on size of pan and thickness of pancake. Pancake should be puffed up and a light golden brown color.

Sprinkle powdered sugar on top of the “pancake” before or after cutting and serving the pancake slices.

One thing that REALLY bothers me about my apartment is that everything is slightly tilted in the kitchen area. Evidence #1:

Fingers crossed our next apartment will be awesome leveled. (I would also like to have a washer, dryer and a dishwasher in my apartment too but I live in New York City so that is very wishful thinking.)
