Chocolate Chip Pancakes

I’m having chocolate chip pancakes for dinner.

Because I feel like it!

For 20-ish pancakes* (fromĀ Food Republic):

  • 2 large eggs
  • 1 1/4 c. milk
  • 4 tbsp. melted butter
  • 1/4 tsp. salt
  • 1 3/4 c. all-purpose flour
  • 2 tsp. baking powder
  • 1 tbsp. sugar
  • 2/3 c. chocolate chips

In a medium-size mixing bowl, whisk together all your dry ingredientsIn a separate bowl, whisk together all of the wet ingredients until the egg is broken up. Add the wet ingredients to the dry ingredients and add the chocolate chips. The batter does not need to be smooth so leave it a little lumpy, otherwise you’re over-mixing. Place a large butter greased, non-stick pan over a medium-high heat and let the surface get hot — I used a small pan because it helps me form a perfectly round pancake. For each pancake, pour 1/2 cup of batter into the pan. Use the back of a spoon to spread the batter into a circle. Bubbles will form in the batter and when they begin to pop, you may flip the pancake over. Turn over gently with the spatula and cook for about one minute on the other side.

Sprinkle with powdered sugar, ice cream, or even whipped cream if you like. Serve warm.

*I ended up with 12 pancakes. WTF.
