Chocolate Cake with Peanut Butter Buttercream

I made this chocolate cake with peanut butter buttercream for Chef’s birthday a few months ago, but I didn’t get a chance to post it until now. Why? The hard drive on my Mac died. After getting it replaced, I realized that I didn’t save the folder that had all of the pictures of the completed cake. It was a really pretty too, but luckily I did manage to find one picture of it.

One. One photo of a measly little slice. If I had saved the pictures correctly, you would’ve seen a picture of a gorgeous, naked two layer cake that looked something like this. It’s okay if you don’t believe me just because I don’t have photographic evidence of the entire creation. It’s okay. I’m only slightly insulted.

Cake (via Martha Stewart):

  • 1 1/2 c. unsweetened cocoa powder
  • 1 1/2 tsp. salt
  • 3 c. all-purpose flour
  • 1 tbsp. baking soda
  • 3/4 c. vegetable oil
  • 1 1/2 c. buttermilk
  • 3 c. granulated sugar
  • 1 1/2 tsp. vanilla extract
  • 1 1/2 tsp. baking powder
  • 3 large eggs, lightly beaten
  • 1 1/2 c. hot water

Peanut butter buttercream (via):

  • 2/3 c. creamy peanut butter
  • 1/2 c. butter, softened
  • 3/4 c. powdered sugar

Preheat oven to 350 degrees. Butter cake pans. Line bottoms with parchment paper, and grease the paper. Dust the pans with a little bit of cocoa powder. Sift cocoa, flour, baking soda, baking powder, salt, and sugar into bowl. Beat in oil, buttermilk, vanilla, eggs, and hot water one at a time; do this on low speed with a standing mixer if you can. Beat until smooth but do not over mix. Pour batter into pans. Bake 45 to 55 minutes. Let cakes cool completely in pans on wire racks, before inverting to remove. While you’re waiting for the cake to cool, mix all of the ingredients for the buttercream together. Mix that shit up until it’s fluffy. Remove the cakes from the cake pans and discard paper. Trim the top layer with a knife so the cake is even. Frost the layer and then place the other layer on top. Frost top of the cake.
