Marshmallow Cloud Cookies | frites & fries
     

New York is cloudy, gross and dreary today. Appropriately, these cloud cookies make it less dreary:

For approximately 2 dozen cookies (revised from Mrs. Field’s Cookbook, via):

  • 3 c. plain flour
  • 2/3 c. cocoa powder
  • 1/2 tsp. baking powder
  • 1 c. white sugar
  • 1 c. light brown sugar, firmly packed
  • 1 c. salted butter softened
  • 2 large eggs
  • 2 c. semi sweet chocolate chips
  • 8 oz. marshmallows, frozen (vegan marshmallows work too!)


Preheat oven to 400F. Put the marshmallows in the freezer prior to baking. In a medium bowl combine flour, cocoa and baking powder. Set aside. Combine sugars in a large bowl. Cream the sugars with butter; add eggs and vanilla until the mixture is lght and fluffy. Add the flour mixture and chocolate chips, and blend at low speed until combined. Batter will be very stiff. Gather a ball of mixture in the palm of your hand, make a well in the middle and fill with a marshmallow, cover over completely encasing them and forming a 2” diameter dough ball. Place balls on lined baking sheets, 2” apart. Bake 8-10 minutes.

Cookies are also great hangover snacks :)
