Last weekend, I made some good old Midwestern food: the meatloaf. I guess meatloaf is served everywhere in America but it’s so nostalgic for me; it makes me think of Minnesota, hot dishes and church potlucks. Now I just need everyone to make it so I know for a fact that it is good even though Chef likes my meatloaf recipe (Really! He Does!).
For one 8” loaf:
- 1 lb. ground beef
- 1/2 c. chopped onions
- 3/4 c. crushed saltine crackers
- 3/4 c. vegetable broth
- 1 oz. onion dip mix*
- 1 tsp. fresh ground black pepper
- 1 clove of garlic, minced
Preheat the oven to 350F. In a large mixing bowl, mix together the crackers, broth and onion dip mix. Add salt, pepper, garlic and the onions.
Stir in the ground beef. Move all of the contents into an non-stick loaf pan (around 8”x4”) and bake for about 45 minutes. Serve immediately.
*The onion dip mix I used was Lipton’s but I’m sure if you use any interesting onion dip concoction that’s about an ounce per package, you’re fine.
